I first tasted chocolate made from Ecuadorian beans during class at Ecole Chocolat. It stood out as having a rich and deep chocolate flavor with slight floral notes along with a bit of fruit. It starts as light on the palette and leaves behind delicate flavor notes. We buy only Nacional (National) certified beans with great genetic purity from above the Guayas river. This is true Fine Flavor chocolate that stands heads above anything we have tried from the region. We can't offer it all the time but when we have it, take the opportunity to try it.
