The Chocolate of Vietnam

 
 

We started trying Vietnamese beans on a fluke. .

We had been trying beans from around 10 countries and really hadn't given much thought to Vietnam as a viable source. The farms are less organized and the fermentation and drying processes were not known to be highly controlled. It wasn't until we were sampled some beans from Ben-Tre that we were proven so very wrong. The results after a bit of testing were a wonderful combination of chocolate flavor with slight fruit overtones and amazingly long lasting flavor. It quickly became a favorite.

We continued to learn about other areas in the country and sampled beans for the next year finally settling on both Ben Tre and Dak Lak origins hand selected from very fine farms.
